The Farm has a fertile volcanic soil, perfect for growing coffee. They use the washed process to ensure a clean flavour. The variety of this coffee is Red Bourbon which is one of the oldest varieties of Arabica coffee. It grows best at 1,400m- 1.700m above sea level with a red coloured cherry. Bourbon is valued for its complex acidity and wonderful balance. It often has a sweet, caramel quality and nice and crisp acidity which can present a distinct flavour depending on where it is planted.
